Fish Hot Pot with Dry Longan




Ingredients
  • 1kg cleaned red fish, cut to chunk
  • 1/2 cup dry longan
  • 5 pieces sliced ginger root
  • 2 tablespoon green onion, sliced
  • 1 tablespoon palm sugar
  • 1 tablespoon soy sauce
  • 2 glasses of water
  • 1 teaspoon chicken powder
  • 1/2 teaspoon black peppers
  • 2 cups vegetable oil for deep fry

Directions
in a medium skillet over medium heat, deep fry chunked red fish, remove and set it aside.

bring water to boiled in a medium pot and add palm sugar, soy sauce, dry longan, sliced ginger root and chicken powder, simmer for 3 minutes.

After that lower the heat and add deep fry chunked fish and continue to cook for another 45 minutes.
Bring it to your taste, add sliced onion and some of the black peppers, simmer it for another 5 minutes.

Serve hot with the rest of black peppers on top.
