Special Frogs Hot Pot


Ingredients:
600g cleaned cut frog
200g green onion, sliced
80g ginger root, sliced
50g dry Chinese black mushroom, soften in water and sliced
5 pieces sliced carrot
1 tablespoon cooking wine
2 teaspoons red garlic, diced
2 pieces dry tofu, sliced
1 cup vegetable oil
Meat seasoning:
1/2 teaspoon of each: salt, sugar, soy sauce, ginger sauce and black peppers
1 1/2 teaspoon thickener flour
To the taste:
1/2 teaspoon fish sauce, 1 teaspoon oyster sauce, 1 tablespoon chicken powder, 3 tablespoon of water

Directions:
Thicken seasoning:  mixed 1 teaspoon thickener flour with a little bit of black peppers and 3 tablespoons of water, and set aside in a small bowl.
In another small bowl, mixed mushroom, soy sauce and a bit of thickener flour and set it aside.
Bring on a large bowl, mixed the frogs with your meat seasoning and leave it for 5-10 minutes and deep fry it till cooked, remove from the grease and set aside.

Put 2 tablespoons of vegetable oil in the pot and browned red garlic, add green onion and ginger, follow with mushroom and (To the taste), let it soak for 5 minutes then add frogs, cooking wine, thicken seasoning, carrot and dry tofu.  Bring it to boiled and remove from the stove to be served.
