Today, I am going to share one of my children best all time favorite coconut waffle. It’s crispy and yummy, shall we get started?
Ingredients:
Serving: about 4-6
Prep time: 30 minutes


Directions:
Mixed rice flour, wheat flour and salt in a medium prep bowl and set it aside.
Beat eggs and sugar with hand beater in a large prep bowl, add coconut milk, fresh shredded coconut meat and pre-mixed flour. Continue to beat until fluffy and leave it for about 10 minutes.
Preheat waffle iron. Spray preheated waffle iron, pour mix in hot waffle iron and cook until golden brown.
Serve hot with or without syrup and fresh shredded coconut meat.

- Wheat flour – 3tbs
- Coconut milk – 3/4 cup

- Fresh coconut meat hand shredded) – 1/2 cup (you may leave some out to serve with waffle)
- Salt – half teaspoon
- 2 eggs – beaten
- Sugar – 1/2 cup (or to taste)
- Pam spray (any type of non-stick spray or cooking oil)
