Stir Fry Curry Blue Crab

Different countries made this specific food in a efferent way, today I will share with you the Cambodian way of cooking it.
Ingredients:
4 servings
  • 6 blue crabs
  • 2tbsp red curry paste
 
  • 1/2cup coconut milk

  • 1tbsp sugar
  • 1/2tsp salt
  • 1tbsp chicken powder base
  • 2-3tbsp crushed peanuts

  • 1/2-1tbsp ground chili paste

  • 2tbsp finely chopped garlic
  • 1tsp finely chopped ginger
  • Cilantro
  • 2-3tbsp oi
Directions:
Clean crabs and divide each crab into 4 portions, or smaller crab into 2 portions.  Leave legs attached to body.
In a large saucepan, heat oil and fry garlic and ginger until golden brown.  Add curry paste and chili paste, and keep it stirred for about a minute, then add crab.  Follow with sugar, salt and chicken powder.  Stir while bringing to simmer.
Cover and keep it simmer gently for about 20 minutes, add coconut milk and stir it from time to time to ensure all the pieces of crab get a turn at cooking and submerged in sauce.  Taste and turn off the heat.
Remove to serving plate and sprinkle with cilantro and serve with hot rice or bread.
