Bitter Melon Omelet

Here is another simple recipe of bitter melon you could enjoy in a few minutes, but yet it is very delicious and super healthy!
Ingredients:
1 medium bitter melon
2 eggs, beaten
1/2 teaspoon of chicken powder
1/4 teaspoon of salt
1/4 teaspoon of sugar
A dust of black peppers
1 tablespoon of cooking oil
1 teaspoon of diced onion or garlic
Directions:
Sliced bitter melon lengthwise before removing seeds and pith, rinse with water and place it upside down to remove excessive water.  Then cut it into 1/4 inch rounds or very thin sliced as you preferred and place in a large bowl.

Add beaten eggs into the bowl of cut bitter melon and started to add chicken powder, salt, sugar, diced onion or garlic and black peppers.  Mix it together and set aside.

Heat up the oil in a large skillet over medium heat and pour half of the mixing egg and melon at a time.  Reduced the heat to low to slowly cook each side for about 2 minutes.
Alright, your omelet is done and ready to be served!
